Potato Latke

6 large potatoes

2 onions

2 eggs

1-1/2 tsp salt

pinch of pepper

1/2 cup of matzoh meal

Vegetable Oil

  • Scrub potatoes thoroughly.  Using a disk blade of a Cuisinart, grate potatoes and dump in a colander.  Sprinkle a little flour over potatoes.
  • Peel onions, cut in quarters, and put in Cuisinart with the eggs, salt and pepper, using the metal coarse blade to grate and blend onions with eggs.
  • Press down on potatoes in colander as hard as you can, squeezing out water
  • In a large bowl, mix together the potatoes, onion/egg mixture and the matzoh meal
  • If mixture too loose, add a little more matzoh meal
  • In a large skillet, heat 6 Tbs. oil until hot.  
  • Drop a large spoonfuls of the potato mixture into the hot oil, in the shape of a pancake.  Allow each to brown on one side, and then flip over and brown the other side.  
  • Remove from pan and drain the oil on paper towels.


Serve hot with apple sauce.
