Crepes for Breakfast

Recipe adapted from allrecipes.com and a favorite of Logan's 💕

-1 cup flour

-1 tsp sugar

-1/4 tsp salt

-3 eggs

-2 cups milk

-2 TBS melted butter

- 1 tsp vanilla

** Have a small spatula ready-recommend a silicone type

Combine dry ingredients in a bowl and set aside. Mix together eggs, milk, vanilla and add melted butter. Let batter rest for 10 minutes in refrigerator.  Heat crepe pan ( small sauté pan) with1 tsp of butter. Once hot add about 2TBS of batter to buttered pan and immediately rotate pan. Crepes are thin and cook fast so watch carefully. Flip crepe after about a minute and cook about another minute until both sides are lightly brown.  Serve with fresh squeezed lemon, granulated sugar and fresh blueberries. Filled with jam or fruit and top whipped cream as well for a delicious treat!
