- 2 cups flour
-1 1/4 cups sugar
- 2 tsp baking soda
-2 tsp ground cinnamon
-1/4tsp salt
- 2 cups shredded carrots
- 1/2 cup raisins
-1/2 cup walnuts
-1/2 cup unsweetened coconut flakes
- 1 apple- peeled, cored and shredded
- 1 cup vegetable oil
- 2 tsp vanilla extract
In large bowl, mix flour, sugar, baking soda, cinnamon and salt.Stir in carrots, raisins, nuts, coconut and apple
With a mixer beat together eggs, oil and vanilla. Combine into flour mixture until moistened. Scoop batter into prepared muffin cups
Bake at 350F for about 20 minutes
