-1 small bag of gourmet potatoes( red or Yukon work well, add a few purple if available)
- 1 bunch of scallions( trimmed and chopped)
- 3/4 cup olive oil
- 2TBS celery salt
- 1 cup fresh dill
- 1TBS fennel seeds(optional)
- salt and pepper to taste
Boil potatoes until tender and set aside. In a large bowl combine olive oil, scallions, celery salt, dill and fennel seeds( if desired). Add warm potatoes and cut with fork and knife while combining well with oil and herb mixture. Garnish with fresh dills sprigs and additional sprinkled celery salt. This recipe can be served warm, at room temperature or chilled. Simple, fresh and seasonal compliment with any grilled protein. Great addition to your next picnic or barbecue!
