In a mixing bowl, combine dry ingredients:
- 2 cups flour
-1 tsp baking soda
- 1/2 tsp each of cinnamon, nutmeg, ground ginger, cloves( can use a pumpkin pie spice)
In separate mixing bowl, combine wet ingredient until well mixed
-1/3 cup of melted coconut oil( or substitute with 1/2 cup of homemade applesauce
- 1 cup pumpkin puree
- 1/2 cup of brown sugar( honey or agave work as well. depending on the sweetnesss of your applesauce you may be able to reduce this)
- 1tsp vanilla
-1/4 cup coconut milk( or any preferred nut milk or dairy)
Fold in dry ingredients with wet ingredients and pour into a prepared loaf pan. Optional to sprinkle top of loaf with pumpkin seeds and additional cinnamon.Bake at 350F for about 50 minutes. Enjoy!
