Quinoa Salad

Serves 6

-1 cup of cooked quinoa cooled

-1/2 tsp fine sea salt

-3 cups of packed finely chopped kale with stems removed

- 1 red bell pepper seeded and chopped

- 1 jalapeno pepper finely chopped (include seeds if desire spice)

 - 1/2 small red onion chopped 

-1/2 cup chopped cilantro

-1 can of drained and rinsed black beans

- 1/3 cup fresh lime juice 

-1/3 cup olive oil

- 1 avocado sliced

-1/2 cup toasted pumpkin seeds

-1/2 cup crumbled feta or soft cheese of choice

Combine cooked quinoa with all ingredients through olive oil and toss.  Just before serving add avocado, toasted pumpkin seeds and cheese.
