Shrimp Ceviche

Recipe from dinneratthezoo.com. We love the mixture of lemon, lime and orange juice in this recipe!

- 2lbs cooked shrimp (cut large shrimp into peices)

-1/2 cup red onion thinly sliced

-1 jalapeno( ribs removed and seeded) minced

- 3/4 cup diced cucumber

- 1 cup Roma tomato (seeded and diced)

-3/4 cup cilantro leaves chopped

- 1 avocado( peeled, seeded) chjopped

-1/2 cup lime juice- fresh

-1/2 cup lemon juice- fresh

-1/2 cup orange juice- fresh

- Kosher salt to taste

- tortilla chips of choice

 

 Place shrimp, red onion, jalapeño, cucumber, tomato, cilantro and avocado in a bowl. Pour lime, lemon and orange juice over shrimp mixture. Add salt to taste and toss. Cover ceviche and refrigerate for at least 30 minutes This recipe can be prepared up to 8 hrs before serving, just omit avocado until serving. Serve chilled with tortilla chips if desired.
