2 stalks finely chopped celery
1 small yellow onion chopped
2 leeks finely chopped (white and light green parts only)
1 large carrot finely chopped
1 peeled apple finely chopped
freshly chopped sage, thyme and parsley
2-3 cups chicken or vegetable broth
1 package of herbed stuffing crumbs or cubed bread of choice
2 TBS olive oil
kosher salt to taste
Add olive oil and a dash of salt to pan and sauté onion, celery, leeks and carrots about 10 minutes or desired consistency. Add apple and sauté a few more minutes. Add bread/stuffing crumbs. Mix with vegetables over low heat while adding broth. Add chopped herbs and combine a few more minutes. Remove from heat and serve. Option to add cooked chopped sausage. Also prepared stuffing can be transferred to a baking dish and warmed prior to serving.
