Makes 8 large or 16 smaller scones
- 3 cups all purpose flour
- 1/3 cup sugar
-3/4 tsp salt
- 1tsp baking powder
- 1/2 cup (8TBS) cold butter
-1 1/2 cups chopped dried fruit, white chocolate or other flavored chips, nuts or any combination. One favorite is dried cherries and white chocolate chips
- 2 large eggs
- 2 tsp vanilla extract
- 3/4 cup half and half or whole milk
- Topping (optional) 2tsp of milk brushed on scone and sprinkle with sparkling crystal sugar and/or cinnamon
Directions: Preheat oven to 375F. Line baking sheet with parchment and dust lightly with flour. In large mixing bowl, whisk together all dry ingredients. Cut in the butter until mixture is unevenly crumbly. This can be done with two knives or with mixer( be careful not to over mix, takes only a minute or two for crumbly consistency) It's ok if larger chunks of butter remain. Stir in fruit, chips and/or nuts.
In separate mixing bowl, whisk together eggs, vanilla and 1/2 and 1/2. Add liquid ingredients to dry ingredients and stir until all is moistened and hold together ( don't over mix).
Place dough on a floured surface and form a 7 inch circle for larger scones ( cut in half for smaller scones) It's ok if the surface and edges have cracks. Using a bench knife ( run it under cold water) and slice circle into 8 wedges. Carefully separate and pull the edges away from one another. Place scones on parchment lined baking sheet. Leave 1/2 inch between each scone. Brush with milk and crystal sparkling sugar if desired.
Bake scones about 30 minutes until lightly brown. Turn baking sheet half way through to evenly bake. Let scones rest on baking sheet for 5 minutes after removing from oven. Serve warm with butter and/or jam.
