Wash chicken breasts and place in large stock pot. Cover with cold water. Add Kosher salt. Bring to a simmer and cook chicken thoroughly. Set cooked chicken breasts aside.Strain broth and add to a clean large stockpot. Add chopped onions, celery, carrots and leeks. Simmer until vegetables are at desired texture.At this point, soup can be customized however you prefer.For a simple soup, Add cooked chicken, grated fresh ginger, chopped parsley, a few sprigs of dill and kosher salt and pepper to taste. I also like adding fresh greens, spinach or escarole are favorites. If using kale, I prefer to chop it finely. Chopped fennel also adds a fresh flavor.For a hearty meal, add any separately cooked pasta or grain. Serve with a mixed green salad and baguette for a simply delicious winter supper.
