Tiramisu

-6 eggs- whites and yolks separated

- 3 cups expresso

- 7 TBS sugar

- 16 oz mascarpone 

- 1.5 oz Baileys Irish Cream

- 1.5 oz Kahlua

- cocoa powder for dusting

In a large bowl, combine egg yolks and sugar with electric mixer until contents turn white- about 7 minutes. Add mascarpone and combine.

In separate bowl combine expresso, Baileys and Kahlua and set aside.

Beat 6 egg whites until stiff peaks.

Dip each ladyfinger in expresso mixture lengthwise and then flip quickly to other side. Arrange close together in serving dish. 

Gentle fold egg whites into mascarpone mixture without deflating egg whites.

Spoon mascarpone mixture over ladyfinger, turn serving dish and start another layer of dipped ladyfingers and cream mixture. Repeat process, turning serving dish each layer until finished. Dust top with cocoa powder. 

Tiramisu is a dessert my grandmother used to make on special occasions so I thought it was fitting to share this recipe in her honor for Mother's Day. Enjoy!
