3 ripe bananas mashed
2 cups flour
1/4 cup ground flax seed
1/2 cup brown sugar
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/3 cup plain yogurt or skyr
2 eggs
1/4 cup coconut oil
3 tsp vanilla extract
1 cup chocolate chips
Whisk flour, baking soda and salt together. Add ground flax seed, cinnamon, nutmeg and set aside. In mixer combine brown sugar, eggs and coconut oil. Add vanilla extract and yogurt. Mash bananas in a bowl, Combine all ingredients and mix. Fold 1 cup dark chocolate chips into batter. Pour mixture into a prepared loaf pan. Bake at 350 for about 60 minutes. Great or breakfast or a healthy snack- enjoy!
