Leek and Mushroom Quiche

- 1  prepared pie crust or see our *pie crust recipe in epicure

- 1 cup washed and diced leeks (white and light green parts only)

- 1 cup of cut white mushrooms 

- 4 eggs

- 2 cups whole milk

- 1 tsp kosher salt

- 1 cup shredded white cheddar (substitute with any desired shredded cheese)

In a Batter bowl or Pour Spout bowl- Whisk eggs, milk and salt. Add leeks mushrooms and cheese to pie crust and pour egg mixture on top to fill pie shell. Bake at 350F for about 45 minutes.Filling should be slightly giggly when done. Let quiche stand for a few minutes before cutting. Serve warm
