Lemon Blueberry Bread

  • 2 ½ cups flour
  • 1 TBS baking powder
  • ½ tsp salt
  • ¾ cup sugar
  • 6 TBS butter
  • 2 eggs
  • 3 TBS fresh lemon juice
  • 1 cup milk
  • 1 tsp vanilla
  • 1 ½ cups blueberries
  • 1 TBS lemon zest

Combine dry ingredients ( flour, baking powder and salt ) in a bowl and set aside.  With an electric mixer-blend butter, sugar, eggs, lemon juice and vanilla. Add dry ingredients to sugar mixture alternately with milk.  Once combined fold in blueberries and lemon zest. Pour batter into a prepared loaf pan. Bake at 350 F for 75-80 minutes.
