Blueberry Cobbler

- 2 pints washed blueberries   

- 2 TBS sugar or agave 

- 2 TBS lemon juice

- 1 cup flour

- 1/2 tsp baking powder

-1/2 tsp salt

-1 stick of butter cut into small pieces

- 1/2 cup sugar

-2 tsp vanilla

- 1 egg

- 1 tsp cinnamon

Combine blueberries, 2 TBS sugar and lemon juice and place in the bottom of a baking dish.  In a separate bowl, whisk together flour, baking powder and salt.  Set aside.  Mix together butter and sugar until light and add vanilla, egg and cinnamon until well blended. Add in flour mixture and combine. With a spoon dollop dough mixture on top of blueberry mixture in baking dish until top is covered. Sprinkle additional cinnamon and sugar on top before baking.  Bake at 350F for about 40 minutes. Serve warm with local vanilla ice cream.
