Rum Ball Cookies

- 1 box of vanilla wafer- Pulse in food processor or blender to make cookie crumbs

- 3/4 cup confectioners sugar

- 1/2 cup corn syrup

- 2TSB cocoa powder

- 1 cup chopped nuts ( walnuts of pecans)

- 1/4 dark rum 

- Additional confectioner sugar for dusting after cookies settle for about 1 hour.

In a bowl, add wafer crumbs and mix in sugar, cocoa powder and nuts. Stir in corn syrup and rum. Roll dough into small ball shapes. Coat with twice with confectioner sugar.  GeeGee's tip. Place about 1/2 cup of confectioner sugar in a small paper or plastic ziplock bag. Add rum balls to bag and gently shake to coat with confectioners sugar. Repeat process twice
