Fresh Tomato Sauce

This quick, no cook tomato sauce is delicious when made with seasonal fresh tomatoes

This recipe can also be roasted if ripe in season tomatoes are not available.

- 4 large ripe red tomatoes- cut into small pieces, we love adding various types/colors

- 2 TBS olive oil

- 1 tsp minced garlic or garlic paste

- kosher salt to taste

- 1/2 cup chopped fresh basil

- 1/2 cup chopped fresh parsley

- 1/8 cup fresh oregano

Mix all ingredients together and let stand at room temperature for several hours or roast in oven for 20 minutes. Cook pasta of your choice and top with fresh tomato sauce ( add fresh burrata if desired) while pasta is hot. Garnish with a sprig of basil. Serve with homemade meatballs. Enjoy!
