This quick, no cook tomato sauce is delicious when made with seasonal fresh tomatoes.
- 4 large ripe red tomatoes- cut into small pieces
- 2 TBS olive oil
- 1 tsp minced garlic or garlic paste
- kosher salt to taste
- 1/2 cup chopped fresh basil
- 1/2 cup chopped fresh parsley
- 1/8 cup fresh oregano
Mix all ingredients together and let stand at room temperature for several hours. Cook pasta of your choice and top with fresh tomato sauce while pasta is hot. Garnish with a sprig of basil and enjoy.
