Ingredients:
- juice of 1 lemon
- cooked orzo pasta
- 1/4 cup olive oil
- kosher salt
-1 cup parmesan cheese
- 1 tsp minced garlic
- 3 cups fresh, chopped spinach ( kale or callaloo are great substitutes)
Method:
Cook orzo pasta according to box directions and set aside. In a sauce pan, sauté olive oil, garlic and kosher salt. Add spinach and sauté until wilted. Add orzo to pan. Stir. Add lemon juice and parmesan cheese and stir until well combined. Season with salt and extra parmesan cheese to taste. Serve warm. This is a delicious side dish with grilled salmon or chicken.
