Panzanella is a basic tomato and bread salad. However it offers many possibilities for layering colorful seasonal ingredients for a wonderful summer meal. Great for  gatherings! Display on a large tray or board- sure to delight your guests.

 Slice loaf of baguette and brush with olive oil, garlic and salt. Place on baking tray and heat in oven or grill until toasted.  Place toasted bread on serving board. Cut a variety of tomatoes, onions, cucumbers, colorful peppers, grilled summer squash and any other vegetables you prefer. Layer bread with cut vegetables- we like to place them in individual groups along tray. Add olives, fresh herbs, cheese if desired.  Top panzanella with simple dressing( olive oil, fresh lemon juice, salt and dijon mustard)
