Recipe adapted from Watermelon, Feta Flag Salad @tasteofhome.com
For dressing: Blueberry White Balsamic Vinaigrette
- 1/2 cup blueberries
-1/2 cup white balsamic vinegar
- 1 cup olive oil
- kosher salt to taste
- honey to taste
Blend all ingredients in the blender or food processor
For the flag salad
Use a white tray, flat basket or board and layer the bottom with assorted greens( we like butter lettuce, arugula, and spinach)
- arrange cubed watermelon into striped on top of the greens
- arrange cubed feta cheese alternately to watermelon on top of the greens
- In upper left hand corner of your "flag" arrange a large square of fresh blueberries.
Use a picture to assemble, customize as desired and toss with Blueberry White Balsamic Vinaigrette before serving.
