3Tbs olive oil
3 stalks celery chopped
1 onion chopped
1 leek chopped(wash leek well)
4 slices of cooked bacon cut into small pieces
4 medium white potatoes peeled and chopped
5 bottles of clam juice
4 cans whole clams
1 small bunch parsley chopped
1 small bunch thyme with stems removed
1 cup light cream
Kosher salt and black pepper
Sauté celery, onion and leek in olive for about 4-5 minutes. Add cooked bacon pieces. Cook a few minutes. Add potatoes, clams, clam juice, thyme. Bring to a boil and simmer for about 40 minutes until potatoes are soft Add salt and pepper. Let cool for a few minutes and add cream. Stir in chopped parsley. Mix well and serve in bowls. Garnish with Kosher salt, black pepper and thyme sprigs. Serve with oyster crackers if desired.
