Summer Gazpacho

Summer Gazpacho

Gazpacho is a simple, refreshing recipe to make when seasonal tomatoes are available. Feel free to customize ingredients as desired. Combine all ingredients in food processor:

- 2 to 3 large ripe tomatoes

- 1 cucumber seeded

- 1 orange, yellow and red pepper seeded

- 1 garlic clove peeled 

- 1/2 cup olive oil

- 3 TBS red wine vinegar

- Kosher salt and pepper to taste

- 1 cup fresh cilantro( parsley, basil work well too)

Serve chilled and garnished with chopped herbs. Delicious as a starter or gazpacho can accompany a seasonal cheese board with crusty bread and a mixed green salad. Pair with a glass of crisp white wine if you'd like for a light summer supper.
