Mini Clam Bakes

Ingredients:

  • Corn on cob (peeled and cut in pieces)
  • Mini red potatoes
  • Clams in shells
  • Lemons
  • Butter
  • Fresh parsley
  • Large squares of aluminum foil

These cute individual clam bake pouches are made in aluminum foil and can be cooked on the grill or in the oven.

Method:

Layer two aluminum foil squares on counter for each pouch. Assemble corn, clams and partially cooked potatoes on each pouch. Add lemon slices, melted butter and parsley to each pouch. Add a few tablespoons of water to each and seal each aluminum foil pouch. They look like little tents when ready to put on grill or in the oven. Cooking time 20-30minutes (if potatoes are partially cooked ahead if time).
