Ingredients:
-3 packages fresh Roma tomatoes- any variety or preference will work- roughly chopped
-Olive oil (about 3 TBS)
-Kosher salt
-Red pepper flakes
-Fresh basil, parsley chopped
-1 bunch of fresh Swiss Chard or spinach- ribs and stems removed
-1 container Buratta
-Grated Parmesan cheese
-2 packages of uncooked fresh pasta (about 16 oz)
-2 cups water
Method:
Sauté olive oil, tomatoes and a dash of Kosher salt for about 10 mins until tomatoes soft and a juicy sauce forms. Add pasta and about 2 cups of water to skillet, cover and bring to a boil. Cook pasta according to package directions-about 3 minutes for fresh pasta. Add all greens and continue cooking until greens are wilted. Break apart Burrata cheese and stir into sauce. Sauce will become creaming. Add grated Parmesan cheese. Sprinkle with red pepper flakes and Kosher salt to taste. Serve as is or add homemade meatballs on the side, if desired. Enjoy!
